Vegetarian Spicy Sweet Potato Samosas | Mini Modette

Try making these Veggie friendly spicy potato samosas!

Perfect to serve at parties or special occasions as a snack ;)

Ingredients

2 Large Sweet Potatoes
250g Filo Pastry
2 Small Red Onions finely chopped
1/4 teaspoon of Ginger Powder
1 teaspoon of Garlic Granules
Dry Mixed Herbs
1 Tin of Green Beans
2 Tbsp Curry Paste (Green or Red)
Poppy Seeds (to go on pastry)
Bottle of Olive Oil or Vegetable Oil

Firstly preheat oven at 200ºC (180ºC for Fan or Gas Mark 6), placing a large baking tray on the middle shelf.

1. Fill medium/large saucepan with water, and bring the water to boil . Peel the 2 sweet potatoes in small chunks and place into the saucepan for 8-10 minutes on medium to high heat or until soft.



Then drain the water leaving just the chunks in the saucepan.

2. In a large frying pan heat up the olive oil (or vegetable oil) and add the chopped red onion until it softens. Then stir in the mixed herbs, garlic and ginger. Finally, add the 2 tablespoons of your curry paste of choice.



3. Add the frying pan contents to the sweet potato chunks and mash well, then stir in a few handfuls of the tinned green beans.



4. Next, it's time to prepare the pastry, on a floured surface take 1 sheet and brush with a little oil.

5. Cut strips of pastry landscape, cutting into 4 long strips, cutting each strip in half. Adding a least a tablespoon of the sweet potato mixture in the middle of each, then fold each strip diagonally, making a triangular samosa shape (cutting off any excess to make shape if necessary). Pinch together the edges of the pastry for each samosa.
ps. This is a lot harder than it seems! :-/


6. Brush each samosa on the top, lightly with olive/vegetable oil, followed by a few sprinkles of poppy seeds as a finishing touch.



7. Place each samosa spread out on the oven baking tray and cook for 25-30 minutes until pastry is golden and looks like filo pastry.
